The only way to change it is to monitor your account / email for new orders and accept them as soon as you see them.
Udimi's timer starts as soon as a new order comes in.

Look guys I wouldn't fret about it. Target 24 hours or less and you will be just fine. I wouldn't be overly concerned about it. Moreover, just provided quality traffic and those stats usually take care of themselves,
I am new in Udimi and trying to figure out everything here ... don't know why it says I accept in 72 hours.. how can I change that?
