How Long Does a Seller Have to Accept a Pending Order?

I placed an order with a seller yesterday who's calendar indicated a opening for today, which is what I ordered. His profile says he normally responds within 5 hours. It's been 24 and no response. When I checked a moment ago, I noticed for the first time that he hasn't logged in since the 10th.
First of all, if this is normal, that's cool. I'm not trying to be "one of those buyers" who complains at the drop of a hat. I'm just new to the process and would like clarification.
If this is a red flag or unusual, what is the process for having the funds released from escrow so I can order from a seller who's more active?
Regardless, I see my mistake was in ordering before initiating contact with the seller first and having a conversation.
Lesson learned.

Should be able to cancel order if hasn't taken up the offer yet I would think.. well you could of in SS not a problem.. hmm
